Fish Favorites

I don’t know what it is – but when the weather starts to change, and warm up, I crave more fish in my diet.

 So, I thought I’d put together a few of my faves for you below:


5-6oz halibut filet.

handful of boiled or sautéed green beans

6-8 Trader Joe’s cauliflower gnocchi.

6 medium size cocktail shrimp

Small Spinach and kale salad with 10 small croutons

Top salad with some salsa and shrimp!

5-6oz Halibut topped with Pico and a side of black beans low sodium.

Side spinach and kale salad topped with Tabasco chipotle sauce

 

------

 

6-8 small shrimp. Marinated in Stubbs Green chilies marinade for 3-4 hours.

Bowl: red and green cabbage on bottom, black beans, cooked shrimp, Pico, and avocado salad.

Avocado Salad:

3-4 avocados keep 2 seeds.

Cut in chunks

1/4 mild Pico de Gallo

1/4 hot Pico de Gallo

Pepper to taste

Dash of garlic salt

1 lime juice

1 small orange juice

1/2 jalapeño

Will keep for 2 days

Also, as a bonus for you guys - I love making salsa and topping my fish, salads or eggs with it throughout the week.  

1 mild Pico de Gallo

1 hot Pico de Gallo

Pepper to taste

Dash of garlic salt

1 lime juice

1 small orange juice

1/2 jalapeño

Blend and put in airtight container and use throughout the week!
